- Heat olive oil in a medium skillet over medium heat.
- Add the sliced onions and cook for 3-4 minutes, stirring occasionally until they are soft.
- Season chicken thighs with salt and pepper. Place them in the skillet with the onions.
- Cover the skillet and cook on medium/low for 2-3 minutes.
- Uncover and cook until the chicken reaches an internal temperature of 165 degrees F, about 10 minutes.
- Once cooked, shred the chicken using two forks and stir in the BBQ sauce.
- Top the mixture with shredded cheese and cover for 1-2 minutes to allow the cheese to melt.
