Ingredients
  

For the skewers
  • 2 medium zucchinis, sliced into ½-inch rounds
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano (or Italian seasoning)
  • Salt and pepper, to taste
  • Skewers (wooden or metal) Soak wooden skewers in water for about 30 minutes to prevent burning.

Preparation
  1. Preheat your grill to medium heat.
  2. In a small bowl, mix the melted butter, minced garlic, dried oregano, salt, and pepper until well combined.
  3. Thread the zucchini slices onto the skewers, leaving a little space between each piece for even cooking.
  4. Brush the garlic butter mixture generously over the zucchini skewers, ensuring they’re well coated.
Cooking
  1. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the zucchini is tender and has nice grill marks.
  2. Remove from the grill and serve warm, drizzled with any remaining garlic butter if desired.
