Ingredients
  

Chicken and Spices
  • 2 lbs boneless, skinless chicken breasts (or thighs) You can use bone-in pieces or thighs if preferred.
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 cup BBQ sauce Plus more for serving.

Method
 

Preparation
  1. Preheat your oven to 400°F. Optionally, spray a baking tray with non-stick spray or cover it with foil or parchment paper.
  2. In a small bowl, mix together the chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper to create the spice rub.
  3. Place the chicken on the baking tray and pat it dry with a paper towel. Rub the spice mix on both sides of the chicken.
Cooking
  1. Bake the chicken uncovered for 20 minutes.
  2. Remove the chicken from the oven and brush the BBQ sauce on top, then return to the oven to bake for an additional 5 to 10 minutes, until cooked through (165°F for breasts, 175°F to 190°F for thighs).
  3. Let the chicken rest for 5 minutes before serving, covering it with foil to retain moisture.
