This Stuffing Meatloaf is a comforting twist on a classic dish, combining juicy ground beef with savory stuffing mix for a flavorful and hearty meal. Perfect for family dinners or meal prep, this recipe is easy to make and packed with deliciousness. Serve it with mashed potatoes and green beans for a complete, satisfying dinner!

Ingredients

Scale
For the Meatloaf:
  • 1 ½ pounds ground beef (80/20 blend recommended)
  • 1 cup dry stuffing mix (such as Stove Top)
  • 1 small onion, finely chopped
  • 1 large egg, beaten
  • ½ cup milk
  • ¼ cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Glaze:
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, stuffing mix, chopped onion, beaten egg, milk, ketchup, garlic powder, thyme, salt, and pepper. Mix gently until just combined—avoid overmixing to keep the meatloaf tender.
  3. Shape the Meatloaf:
Transfer the mixture to the prepared loaf pan and shape it into a loaf. Alternatively, you can shape it freeform on a baking sheet for a crispier exterior.
  4. Make the Glaze:
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake the Meatloaf:
Bake for 45 minutes, then remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute, ensuring a moist and flavorful result.

Notes

  • Stuffing Mix Variations: Use your favorite flavor of stuffing mix, such as herb-seasoned or cornbread, for a unique twist.
  • Glaze Alternatives: Substitute barbecue sauce for the ketchup glaze for a smoky flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
