Indulge in these delightful Crispy Cheesy Potato Puffs—golden on the outside, creamy and cheesy on the inside. They’re perfect for using up leftover mashed potatoes and make a fantastic snack or side dish that everyone will love.

Ingredients

  • Mashed Potatoes: 2 cups, at room temperature
  • Large Eggs: 2, beaten
  • Shredded Cheddar Cheese: 1 cup, divided
  • Grated Parmesan Cheese: 1/4 cup
  • Fresh Chives: 1/4 cup, finely chopped
  • All-Purpose Flour: 1/4 cup
  • Garlic Powder: 1/2 teaspoon
  • Salt and Black Pepper: to taste
  • Cooking Spray or Butter: for greasing

Instructions

  1. Preheat the Oven:
Set your oven to 400°F (200°C). Lightly grease a mini muffin tin with cooking spray or butter.

  2. Prepare the Mixture:
In a large bowl, combine the mashed potatoes, beaten eggs, 3/4 cup of the shredded cheddar cheese, grated Parmesan, chopped chives, flour, garlic powder, salt, and black pepper. Mix until well combined.

  3. Fill the Muffin Tin:
Spoon the potato mixture into the prepared mini muffin cups, filling each about three-quarters full.

  4. Add Toppings:
Sprinkle the remaining 1/4 cup of shredded cheddar cheese evenly over the tops of the puffs.

  5. Bake:
Place the muffin tin in the preheated oven and bake for 20 minutes, or until the puffs are golden brown and set.

  6. Cool and Serve:
Allow the puffs to cool in the tin for 5 minutes before removing. Serve warm, optionally garnished with additional chives or a dollop of sour cream.

Notes

  • Leftover Mashed Potatoes: This recipe is an excellent way to repurpose leftover mashed potatoes. Ensure they are at room temperature before mixing.
  • Cheese Variations: Feel free to experiment with different cheeses like Gruyère or Monterey Jack for a unique flavor profile.
  • Add-Ins: For extra flavor, consider adding cooked bacon bits, sautéed onions, or herbs like parsley.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 400°F (200°C) oven for about 15 minutes to regain crispiness.
