Instructions
- Prep the Rice: Mix the rice vinegar, sugar, and salt in a bowl. Gently fold it into the warm sushi rice, ensuring even distribution. Let the rice cool to room temperature.
- Lay It Out: Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. Lay a nori sheet shiny side down on the mat.
- Spread the Rice: With damp fingers, spread a thin, even layer of rice over the nori, leaving a 1-inch border at the top.
- Add the Filling: Arrange shrimp, cucumber, avocado, and lettuce (if using) horizontally across the rice.
- Roll It Up: Starting at the bottom edge, use the mat to gently roll the sushi into a tight log. Press gently to seal.
